The Degustation Experience

The evening begins gently, with tender boiled pork dressed in a delicate sesame sauce that lightly coats the palate, awakening it without excess. It is followed by monkfish liver — smooth, creamy, and indulgent — dissolving with a subtle marine sweetness that lingers softly and prepares the senses for the oceanic progression ahead.

A refined bento presentation introduces mackerel, squid, and mountain burdock, weaving together briny depth and earthy nuance. Each element is measured, each texture intentional. The sashimi course deepens the narrative with white mackerel and amberjack, sliced to emphasize their soft, silky structure and pristine finish. Salmon roe paired with sea urchin delivers contrast — bright saline bursts meeting buttery richness in harmonious balance.

As the nigiri sequence begins, the atmosphere at the counter grows almost meditative. Squid arrives tender and lightly sweet. Grilled red snapper carries a subtle aromatic warmth. Fresh sea urchin expresses the purity of the ocean in its most delicate form, while scallop nigiri offers a luminous, translucent softness. Japanese salmon reveals exceptional silkiness before the crescendo: bluefin tuna belly, melting effortlessly with a mouth-coating, satin finish that defines the artistry of true omakase.

A sweetly cooked dried gourd provides a traditional pause — nostalgic and precise — before the finale shifts toward contemporary refinement. Chocolate cake paired with Japanese strawberry closes the experience with restrained elegance, balancing richness and gentle acidity.
Ambience & Setting

The main counter accommodates approximately ten guests, preserving an intimate and focused environment where each movement of the knife becomes part of the theatre. For private gatherings, a discreet dining room hosts up to twelve guests — ideal for curated celebrations or refined business dinners.
