Porterium Magazine — Japan Gastronomy Series

During our recent visit to Japan, the team at Porterium Magazine explored the country’s cultural and gastronomic landscape through a curated search for Tokyo’s hidden culinary gems — an approach that ultimately led us to Ginza Tsukasa. Located in the heart of Ginza, the restaurant presents an omakase experience guided by Chef Tsukasa, whose professional path includes training within Michelin-starred kitchens — a background reflected in the discipline, composure, and technical refinement of each course.

At the core of the experience is the philosophy of omakase — meaning “I trust you” — where course selection is placed entirely in the chef’s hands. Rather than ordering individually, diners allow the meal to unfold according to seasonality, sourcing, and instinct, transforming dinner into a curated progression shaped by timing and technique. At Ginza Tsukasa, this trust establishes the rhythm of the evening, with each course introduced deliberately and served at the precise moment its flavor and texture are most expressive.
The Food: Omakase Crafted with Precision

The degustation experienced during our visit unfolded as a dialogue shaped by Chef Tsukasa’s intention, each course prepared within view and presented with quiet focus. Structured around approximately five appetizers, ten sushi courses, and dessert, the menu (¥33,000 / about €180) demonstrated balance and restraint rather than excess.
The gastronomic sequence highlight texture and visual poetry:
- Octopus paired with Japanese caviar and scallop, decorated with blossoming branch flowers
- Cheek tuna lightly kissed with lemon cedar and dipped in hot water for seven seconds
- Puffer fish (blowfish), sliced with delicate precision
- Monkfish liver marinated in broth — melting, smooth, and creamy
- Bonito fish seasoned with a secret spice soy blend infused with sake
Signature Feel: From Delicate to Indulgent

As the courses progressed, Chef Tsukasa guided the menu from lighter flavors toward richer expressions. From there, sashimi and sushi deepen in richness:
- Amberjack sashimi
- Melt-in-the-mouth tuna belly sushi
- Sea urchin nigiri
- Tiger prawn nigiri
- Sea bream nigiri gently touched with charcoal
- Grilled sea eel

Each piece arrives at its ideal temperature, the rice subtly seasoned to support — never overpower — the fish. Knife work, texture, and timing shape the rhythm of the meal, guiding diners from ocean-bright delicacy toward layered umami depth.

Dining here reveals how discipline, sourcing, and technique converge into something far beyond a meal. Positioned among the top omakase restaurants in Ginza, Ginza Tsukasa reflects the quiet precision that defines exceptional sushi dining in Tokyo. For readers exploring authentic Edomae craftsmanship, this intimate counter offers a refined and memorable destination shaped by trust in the chef, thoughtful progression, and the enduring art of omakase.

For booking details, guests should note that the restaurant accommodates only eight seats at the counter, making advance reservations essential to avoid disappointment.
