The Story of Fernet Monte-Carlo: The Art of Conviviality

Welcome to Le Fernet, an exceptional destination where guests come not only to dine, but to embrace the art of feeling good. The story of the restaurant was born from a sincere moment in Monaco, when a member of the team was simply “not feeling quite himself.”
Around a generous meal shared among friends, energy and smiles returned. From this authentic moment of conviviality came Le Fernet Monte-Carlo in 2026: a brasserie imagined as a true gourmet sanctuary.

At Le Fernet, hospitality is a promise, and every guest is welcomed with the warmth reserved for close friends. Rooted in the great tradition of French brasseries, Le Fernet reinterprets this heritage through the refined elegance of the Principality. The lively spirit of Parisian dining meets Monaco’s understated sophistication, creating an experience that is warm without excess, elegant without pretension, and vibrant yet intimate.
Le Fernet is destined to become a new essential meeting place in Monaco – for lunch, dinner, or simply to raise a glass.
The Setting: A Universe Designed by Rodolphe Parente
To shape its visual identity, Le Fernet Monte-Carlo entrusted its interior design to renowned Parisian designer Rodolphe Parente, who trained under the legendary Andrée Putman. His distinctive approach, blending contemporary design with fine craftsmanship, subtly explores inspirations drawn from the 1930s, 1970s, and 1980s.
A Reinvented Brasserie Spirit

The décor draws inspiration from the timeless soul of the French brasserie. Warm wood panelling, aged brass, mirrors, and crisp white tablecloths compose an atmosphere that feels both familiar and elevated, softened by a distinctly Mediterranean sensibility.
Monégasque Elegance

The layout unfolds through a succession of atmospheres, from spaces opening onto the city to more intimate lounges framed by enveloping banquettes. Noble woods, patinated leather, and indirect lighting create a refined cocoon where acoustics have been carefully considered to preserve the intimacy of conversation. Refinement reveals itself in the precision of every detail – expressive tableware, subtle gilded touches – celebrating a discreet form of luxury that is felt more than displayed. On selected evenings, live musicians gently enrich the atmosphere with an elegant and vibrant touch.
The Cuisine: A Characterful Culinary Vision by Chef Mathieu Dorlac

At the helm of the kitchen, Chef Mathieu Dorlac brings together the grand tradition of the French brasserie with a terroir-driven gastronomic approach. His cuisine is heartfelt, generous, and direct, elevated through precision cooking and refined presentation. Every ingredient is celebrated without artifice, with deep respect for provenance and for the passionate producers behind each product.
The menu unfolds through a carefully curated seasonal selection:

Starters
Reimagined classics built around seasonal vegetables, foie gras, seafood, and shellfish.
Main Courses
Land and sea inspirations alternating noble meats with elevated brasserie classics.
Desserts
Creations rooted in the prestigious heritage of French pastry-making.

Each plate tells the story of authentic craftsmanship, accompanied by attentive service that extends the overall experience.
“At Le Fernet, nothing is left to chance: respect for the product, precision in every gesture, sincerity on the plate.” — Chef Mathieu Dorlac
The Wine Cellar & Terroirs

At Le Fernet, the wine list is designed to be explored like an art gallery. Imagined by Head Sommelier Florine Huby, it pays tribute to the richness and diversity of terroirs through a unique dialogue between wine and illustration.

Each region – from the peaks of the Jura to the sun-drenched landscapes of Corsica – is introduced through an original artwork echoing the personality of the selected wines.
Whether guided by the elegance of a Grand Cru or by the discovery of a wine by the glass, each bottle becomes a stop along a gastronomic journey in the heart of Monaco.
